I love making egg muffins for my children. First, they are easy. Second, they help with stress-free mornings. And third, they are healthy. Not to mention, they make a great snack for me too. These egg muffins are packed with protein and healthy fats giving your family vital brain boosting nutrients. This recipe can be made ahead for busy school mornings or used as a peanut free lunch option.
This recipe cooks perfectly in my silicon Kiddo Feedo Freezer Trays. I am a fan of finding multiple uses for kitchen tools and these trays work well in the freezer and oven alike.
- 6 pastured eggs
- 1 cup diced garden fresh tomatoes (any variety)
- 1 tsp. pastured butter
- ½ cup pastured heavy cream
- ½ cup panko breadcrumbs (gluten free breadcrumbs work too)
- ½ cup shredded pastured cheese (I like cheddar, coopers, feta)
- ½ tsp. salt
- Whisk eggs, milk, bread crumbs and salt in a medium mixing bowl.
- In a cast iron skillet, melt butter over medium heat.
- Dice tomatoes and add to skillet. Cook for 5 minutes and remove from heat.
- Mix tomatoes and cheese into batter.
- Pour into 2 Kiddo Feedo silicone trays (half way).
- Cook on 350 F for 20-25 minutes or until done and golden brown.
Tips to Teach Taste:
- Use a variety of tomatoes in one recipe. This includes color- red, yellow, orange, purple tomatoes.
- Start with your child’s favorite cheese but graduate to more flavorful cheeses. You may want to consider going from American cheese to a sharp cheddar or from an Asiago to feta cheese.
- If your child does not like tomatoes, skip the tomatoes. However, incorporate tomatoes the second time you make these muffins but cook the tomatoes longer. The longer they cook, the more they break down in texture. Start with a small amount and build the quantity of tomatoes as your child accepts this dish.
- Slowly add fresh herbs. Adding a teaspoon of diced oregano or rosemary will give a hardy taste. Adding a teaspoon of cilantro or basil will give a cleaner taste.
- Slowly add small amounts of spice such as cumin or your favorite taco seasoning.
- Let your children get involved in meal preparation by cracking, whisking, and pouring the egg mixture.
